Ingredients
  • 4 eggplants (cut wide into strips 1/4 in. thick)
  • 4 Tbsp. Secolari Basil Olive Oil
  • 3 oz. egg yolks
  • 3 oz. flour
  • salt and pepper to taste
  • 6 oz. whole coriander seeds

Instructions
  1. Let the eggplant absorb the Secolari Basil Olive Oil, turn them at least once after 5 minutes, then bread lightly with egg yolks and then seasoned flour, searing on 2 sides on a cast iron skillet (if you can), about 2 minutes to a side. The eggplant should caramelize. Then set aside. Spread the basil pesto on to the eggplant and roll up, serve and enjoy!
