Aromatic Lemon and Spinach Rice (Spanakoryzo)

This Greek Spinach Rice is a 20-minute side dish made with just a few simple ingredients you may already have on hand. A perfect side dish served with roasted or grilled chicken, lamb or fish. A main meal for vegetarian or vegans. Chef Alba

  • 2 tbsps Secolari Lemon Olive Oil or basil olive oil
  • 2 spring onions finely chopped
  • 1 large shallot minced
  • 1 leek finely chopped
  • 1 small container baby spinach roughly chopped
  • 2 ripe roma tomatoes roughly chopped
  • 1 cup rice
  • 2 cups vegetable or chicken broth or water
  • 1 to taste Secolari Wild Porcini Sea Salt
  • 1 to taste freshly ground black pepper
  • 3-4 tbsps freshly chopped dill
  • juice 1/2 lemon


  • In a shallow, wide casserole-type pan warm the olive oil. Add the spring onions, shallot, and leek and stir fry them gently for 3-4 minutes, until translucent. Add the spinach, the finely chopped tomato and the rice. Give everything a good toss and leave them to wilt. Then pour over 2 cups water or broth, season with salt and pepper, cover and simmer for 20 minutes.
  • When ready add the dill and add a good squeeze of lemon juice. Give everything another good toss and serve.
