  • 20 grape tomatos cut in half lengthwise
  • 3 garlic cloves minced
  • 1/2 teaspoon dried oregano

  • freshly ground black pepper
  • pinch of red pepper flakes
  • 1 pound mini multi-colored potatoes sliced 1/4 inch thin or thinner
  • 2 ounces crumbled feta
  • 1/2 bunch fresh italian parsley roughly chopped
  • Secolari Balsamic Vinegar drizzled
