Champagne Mimosa Vinegar is made on a small family owned farm in California. It is created in small batches to ensure quality. Carefully hand-picked citrus fruits and a gluten free vinegar base are placed in small vats. For Champagne Mimosa Vinegar, white California grapes are used for the champagne base. The Mother of Vinegar, a naturally occurring healthy bacteria culture, is added to help fermentation. After several months of mild fermentation, extra-special secret steps are done to ensure the vinegars are bursting with flavor. All of our vinegars are 100% gluten free.

My absolute favorite vinaigrette for salads! Elegant, light, and delicious. It is divine in Ina Garten’s “Vinaigrette For Green Salad” recipe and America Test Kitchen’s “Foolproof Vinaigrette” recipe. I enjoy it most on a simple bed of delicate greens (spinach, arugula, or a spring mix) with toasted nuts (walnuts are my favorite), shreds of Parmigiano-Reggiano or crumbled goat cheese, and occasionally a light sprinkling of cranberries.

Mixed with olive oil, a teaspoon of Dijon mustard, a dash of salt and freshly ground pepper=delicious salad dressing. So glad I was introduced to Secolari Vinegars!
