Wild Nutted Rice

During the summer season we generally look for simple and fresh recipes to make. Join us while we create fresh dishes prepared quickly with the freshest ingredients including Secolari oils, balsamic and delicious sea salt. Here are some appetizing recipes we will be making especially suited for a hot summer such as Honey Dew and Crispy Prosciutto, Shrimp with Fresh Oranges and white Wine, and Wild Nutted Rice.

Wild Nutted Rice

Ingredients
  

  • 1 cup wild rice
  • 5 1/2 cups broth
  • 1 cup pecan halves
  • 1 cup golden raisins
  • rind of one large orange
  • 1/4 cup fresh mint
  • 4 scallions thinly sliced
  • 1/4 cup Secolari Blood Orange Olive Oil
  • 1/3 cup fresh orange juice
  • Secolari Champagne Mimosa Vinegar
  • Secolari Wild Porcini Sea Salt
  • freshly ground black pepper

Instructions
 

  • Place rice in strainer and run under cold water. Rinse thoroughly. In a medium size pot, add the rice and broth. Bring to a boil; simmer uncovered for about 45 minutes. After 30 minutes, check for doneness. Rice should not be too soft.
  • Place a thin towel on a colander. Ad the boiled rice and strain well. Transfer the rice to a bowl when completely free of liquid.
  • Add remaining ingredients and toss well to combine. Allow to stand for at least 2 hours.
