Moroccan Olive Salad with Mint, Garlic & Spices

  • In a skillet on medium-low heat, add the oil. When hot, add the shallots, garlic and carrot.
  • Cook until shallots are softened.
  • Add the zest of lemon, vinegar sea salt, cumin, coriander and pepper flakes.
  • Add the olives over low heat until the oil starts to sizzle.
  • Remove from heat, let cool to room temperature. Add the mint and serve.
