Moroccan Olive Salad with Mint, Garlic & Spices

Moroccan Olive Salad with Mint, Garlic & Spices

Ingredients
  

  • 1/2 cup Secolari Sicilian Blend Olive Oil
  • 2 shallots minced
  • 4 garlic cloves peeled and crushed with the side of a knife
  • 1 blanched carrot minced
  • 1 lemon for zesting
  • 2 tablespoons Secolari Ancho Pepper Vinegar (add an extra tablespoon if desired)
  • Secolari Roasted Garlic Sea Salt
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground coriander
  • 1/2 teaspoon crushed red peper flakes
  • 1 cup green spanish olives
  • 1 cup black olives
  • 2 tablespoons minced fresh mint (add an extra tablespoon if desired)
  • pinch of red pepper flakes

Instructions
 

  • In a skillet on medium-low heat, add the oil. When hot, add the shallots, garlic and carrot.
  • Cook until shallots are softened.
  • Add the zest of lemon, vinegar sea salt, cumin, coriander and pepper flakes.
  • Add the olives over low heat until the oil starts to sizzle.
  • Remove from heat, let cool to room temperature. Add the mint and serve.
