Moroccan Olive Salad with Mint, Garlic & Spices
Ingredients
- 1/2 cup Secolari Sicilian Blend Olive Oil
- 2 shallots minced
- 4 garlic cloves peeled and crushed with the side of a knife
- 1 blanched carrot minced
- 1 lemon for zesting
- 2 tablespoons Secolari Ancho Pepper Vinegar (add an extra tablespoon if desired)
- Secolari Roasted Garlic Sea Salt
- 1/4 teaspoon ground cumin
- 1/4 teaspoon ground coriander
- 1/2 teaspoon crushed red peper flakes
- 1 cup green spanish olives
- 1 cup black olives
- 2 tablespoons minced fresh mint (add an extra tablespoon if desired)
- pinch of red pepper flakes
Instructions
- In a skillet on medium-low heat, add the oil. When hot, add the shallots, garlic and carrot.
- Cook until shallots are softened.
- Add the zest of lemon, vinegar sea salt, cumin, coriander and pepper flakes.
- Add the olives over low heat until the oil starts to sizzle.
- Remove from heat, let cool to room temperature. Add the mint and serve.
