Mediterranean Black Bean Salad Recipe – A Secolari Twist on a Family Favorite
Our Blackberry with Roasted Pepper Vinegar has a gentle kick – it’s a bit smoky, and a bit seductive. Made with blackberries, organic char-roasted bell peppers, and just a hint of ancho pepper, it adds a flavorful twist to any dish. For a tasty light meal, we recommend a Mediterranean Black Bean Salad – great for an easy recipe in a pinch. Perfect for a side dish, or to bring for lunch all week long!
- 3 15 oz cans black beans – rinsed and drained
- 1 15 oz can whole kernel corn
- 1 medium cucumber, finely diced
- 1 cup chopped cilantro
- 2 to 3 limes, juiced
- 1/2 cup chopped green onions
- 1 1/2 cups crumbled feta
- 1/3 cup Secolari Blackberry with Roasted Pepper Vinegar
- Cracked black pepper
- Secolari Roasted Garlic Sea Salt
- Cumin to taste
Combine the black beans, corn, cucumber, cilantro, green onion, and feta in a large bowl and toss until mixed evenly. Add lime juice and Blackberry Roasted Pepper Vinegar, stir, and taste. You may wish to add more lime to taste. Add two generous pinches of Roasted Garlic Sea Salt, a dash of pepper, and a dash of cumin to taste. Chill for at least one hour before serving. Enjoy!
