Cucumber Tomato Feta Bouchées

Bouchées in French means bites. This recipe can be made ahead and refrigerated an hour before your guest arrive.  It is usually served as an appetizer, however you could also serve it as a side dish, or a salad without using the skewers. Either way, it’s a great refreshing summer dish. Chef Wecker

Cucumber Tomato Feta Bouchées (Bites)

Bouchées in French means bites. This recipe can be made ahead and refrigerated an hour before your guest arrive.  It is usually served as an appetizer, however you could also serve it as a side dish, or a salad without using the skewers. Either way, it's a great refreshing summer dish. Chef Wecker

Ingredients
  

  • 1 English cucumber cut into 1/4 inch slices
  • 1 8-ounce whole feta cheese into cubes
  • 12-14 cherry or grape tomatoes
  • 1 to taste freshly ground black pepper
  • 1 to taste Secolari Roasted Garlic Sea Salt
  • 6 Tbsps Secolari Basil Olive Oil
  • 3 Tbsps Secolari Tuscan Herb Balsamic

Instructions
 

  • In a bowl, add the olive oil, balsamic, salt and pepper. Add the cucumber and tomatoes; mix well to marinate.
  • Place 1 cucumber piece, 1 cube of Feta, and 1 tomato on short skewers alternating colors. Place the bites on a serving plate and drizzle any extra dressing on top. Note: if you like, you could use baby mozzarella, or any cubed cheese you prefer.
