Instructions
  1. In a bowl, add the olive oil, balsamic, salt and pepper. Add the cucumber and tomatoes; mix well to marinate.
  2. Place 1 cucumber piece, 1 cube of Feta, and 1 tomato on short skewers alternating colors. Place the bites on a serving plate and drizzle any extra dressing on top. Note: if you like, you could use baby mozzarella, or any cubed cheese you prefer.
