  1. Place a large skillet over medium-high heat and add 2 tablespoons olive oil. When hot, add sausages and cook until all sides are browned. When ready remove and reserve.
  2. In the same skillet, add remaining 3 tablespoons olive oil, onions, peppers, and tomato, sauté over medium heat for a few minutes. Add the garlic, paprika and season to taste. Reduce to medium; simmer stirring for a couple more minutes.
  3. Cut sausages into bite-sized pieces. Add them to the skillet; add the oregano and stir often to blend with the other ingredients. Simmer for another 5-7 minutes. Check for seasoning and adjust with salt and pepper. Serve on a platter and drizzle additional olive oil if desired. For additional flavor, drizzle a thick balsamic on top.
