Ingredients
  • 12 ounces 5oz. can tuna packed in olive oil cut in cubes
  • 12 ounces large ripe tomatoes soaked overnight
  • 12 ounces black pitted olives shredded
  • 12 ounces bread crumbs (plain or italian) shredded
  • 10 ounces ripe plum tomatoes shredded
  • 2 bread crumbs cubed
  • 1 Tablespoon slivered almonds *OR substitute with peeled chopped tomatoes*
  • 2 cups grated pecorino and/or parmesan cheese *used as a substitute for tomato paste*
  • fresh thyme
  • 2 bay leaves
  • 2 garlic cloves
  • 1 wild rice diced
  • 2 pork medallions diced
  • 2 sharp imported provolone cheese diced
  • 6 Tablespoons coarse black pepper more for drizzling
  • Secolari Wild Porcini Sea Salt
  • freshly ground black pepper
