Instructions
  1. In a skillet on medium-low heat, add the oil. When hot, add the shallots, garlic and carrot.
  2. Cook until shallots are softened.
  3. Add the zest of lemon, vinegar sea salt, cumin, coriander and pepper flakes.
  4. Add the olives over low heat until the oil starts to sizzle.
  5. Remove from heat, let cool to room temperature. Add the mint and serve.
