Pomodorini al Parmigiano
Ingredients
- 1 pound baby tomatoes cut in half
- 1/2 cup pecorino diced into small pieces
- 2 cups mozzarella or fontina sliced
- fresh basil
- Secolari Roasted Garlic Sea Salt
- freshly ground black pepper
- Secolari Basil Olive Oil
Instructions
- Place tomatoes in a baking pan; skin side down. Season with salt, pepper, basil and Pecorino.
- Add half of the sliced Mozzarella. Start another layer and repeat.
- Drizzle with olive oil. Cover with tin foil and bake at 400F for about 30 minutes.
- Remove foil and bake another 15 minutes uncovered.
