Pomodorini al Parmigiano

Ingredients
  

  • 1 pound baby tomatoes cut in half
  • 1/2 cup pecorino diced into small pieces
  • 2 cups mozzarella or fontina sliced
  • fresh basil
  • Secolari Roasted Garlic Sea Salt
  • freshly ground black pepper
  • Secolari Basil Olive Oil

Instructions
 

  • Place tomatoes in a baking pan; skin side down. Season with salt, pepper, basil and Pecorino.
  • Add half of the sliced Mozzarella. Start another layer and repeat.
  • Drizzle with olive oil. Cover with tin foil and bake at 400F for about 30 minutes.
  • Remove foil and bake another 15 minutes uncovered.
